Last Thursday, TomKat Ranch in Pescadero hosted an intimate demonstration by Chef Charles Vollmar on how to cook the ranch's Leftcoast Grassfed beef.
Chef Vollmar, an alumnus of the legendary Chez Panisse restaurant in Berkeley, showed how to cook several dishes (featuring beef as the star ingredient, of course) in the ranch's rustic yet thoroughly workable kitchen to a group of Leftcoast clients and local farmers. Vollmar now offers a range of culinary experiences through Epicurean Exchange.
