Aple Buckwheat Cakes - Healthy

S good - hot or cold...
For 2 large cakes - (double or triple as desired - keeps for a few days)
*Grate1 large apple
*2 egg whites )I don't use yolks - you can if you like)
*A tablespoon (or so) of Olive Oil (cold pressed, extra virgin)
*About 1/2 to 3/4 cups of Buckwheat pancake mix (Organic of course).
Mix together, place in non-stick skillet, or cast iron skillet using coconut oil spray - Cook on Medium low heat for about 4 minutes until golden brown, flip and do same for other side.
(Sometimes I cheat and mix in dark semi-sweet chocolate chips).
Super yummy

**If you want even healthier, add some thick rolled oats to the mixture, but you will need to add orange juice, water, or other liquid of choice.
Mix until thicker than pancake batter...
